Easy Vegan Recipe – Ratatouille from a vegan cook

This vegan ratatouille by Chef Victor makes an excellent side dish for your next vegan meal.

Ingredients

  • 1 cup crushed tomatoes
  • 2 Tablespoon extra virgin olive oil
  • 1/4 teaspoon apple cider vinegar
  • 1 teaspoon minced garlic
  • 1 Tablespoon fresh basil (chopped)
  • 1 teaspoon oregano powder
  • 1 tablespoon parsley (chopped)
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup red bell peppers (diced)
  • 1/4 cup green peppers (diced)
  • 1/4 cup onion (diced)
  • 2 cups zucchini (sliced)
  • 3 cups eggplant, (sliced)
  • 3 cups fresh tomatoes, (sliced)

Directions

  • Preheat the oven to 350F. Lightly grease your cast iron skillet and set aside.
  • Slice your vegetables not too thin. Toss the eggplant with 1 teaspoon of the salt and allow to drain in a colander for 10 minutes. Pat dry with a paper towel and set aside.
  • In a medium pan heat 1 tablespoon of olive oil at medium heat sear the eggplant slices for 10 seconds each side and set aside.
  • On the same pan saute the rest of the oil, garlic, bell peppers, and onion until soft.
  • Add to the pan the crushed tomatoes, vinegar. basil, parsley oregano, salt, pepper, and pepper flakes. Simmer it for 10 minutes on low heat. This is your tomato sauce, take a second to enjoy the aroma.
  • Pour the tomato sauce into the prepared skillet and smooth it into an even layer on the bottom of the skillet.
  • Place the veggie slices in alternating patterns (zucchini, eggplant, tomato, repeat) placing them leaning against the edge of the pan. Repeat until you’ve filled the skillet from the outside to the inside or used up all of the veggie slices. Whatever happens first. Creating a beautiful spiral. Make sure you take pictures.
  • Bake for 35 minutes, until the tomato sauce at the bottom is bubbling and the veggies are tender.
  • Serve with a spoonful of the tomato sauce on the bottom topped by veggies. Garnish with fresh basil and a drizzle of olive oil.

Easy Vegan Recipe – Papaya Smoothie With Hemp Seeds from Anyreasonsvegan

Furthermore 100 grams of papaya contains 43 calories, 1.7 g fiber, 0.47 g protein, and 6% of your daily requirement of Vitamin A. Papaya is also rich in various B vitamins, as well as vitamins C, E, and K. This nutritious tropical fruit also has iron, magnesium, calcium, zinc, and more!

It’s important for me to top my papaya smoothie recipe with about 1 tbsp of hemp seeds! I love hemp seeds they are so tiny yet so nutritious, they are great for plant based diets. They also have a lovely naturally nutty earthy flavor that contrasts the tropical fruit so well. Hemp seeds are rich in protein, fiber, and healthful fatty acids, including omega-3s and omega-6s. They are packed with antioxidants and are also considered a complete protein.”

All you need to make this smoothie is: 3 cups frozen papaya chunks, 1 tbsp orange juice, 1/2 cup coconut milk, 1 tbsp agave nectar, 3 mint leafs, and 3 tbsp hemp seeds. These portions will make 3 servings. I like to top each serving with some mint leafs because it adds a refreshing and distinct flavor like none other!

This papaya smoothie recipe is so simple to make just start by prepping your papaya chunks and freezing them overnight. Then combine them with coconut milk and orange juice in your blender and blend it smooth. Pour the it into 3 separate cups and top each one with mint and hemp seeds. Serve them immediately as well for the best texture and temperature.

Ingredients:

  • 3 cups frozen papaya chunks
  • 1 tbsp orange juice
  • 1/2 cup coconut milk
  • 1 tbsp agave nectar
  • 3 mint leafs
  • 3 tbsp hemp seeds

Directions:

  • Start by slicing your papaya in half and scooping the seeds out.
  • Then use the same spoon to skip out chunks of the papaya fruit.
  • Put the papaya in a ziplock bag and freeze it over night
  • Combine the frozen papaya chunks with the orange juice, coconut milk, and agave nectar in
  • your blender and blend until smooth.
  • Top with hemp seeds and mint leafs
