5 Golden Diet Goals for My 2015 New Year’s Resolution – Eat More Raw Vegan Foods!

Over the past two years, I’ve been trying new vegan foods and transiting from vegetarian to vegan. Naturally, now that I’m eating a full vegan diet in 2015, I want to take a step up and try eating more of a RAW vegan diet! Not fully raw, just more raw (for now)!

Now, as a full vegan, I’m interested in living this lifestyle in a healthy way. I made my New Year’s Resolution to be full vegan and to make an effort to eat more raw fruits and veggies throughout the day. I try to be generally healthy and am strict with what I eat. That’s why I don’t just buy any frozen veggie burgers;  I am choosy with what I buy. I love my packaged snacks, but I eat them in moderation. I always make sure to eat my fruits and veggies, but I want to eat MORE raw foods since they contain more nutrient content than most cooked foods.

I admit that going totally raw vegan is daunting, so I’m not going that route. Who knows what the future holds; the idea of trying a Raw Till 4 vegan diet sounds pretty nice sometime. For now, however, I’m starting small by incorporating more raw foods into my day.

Here are some easy ways I’ve been adding raw, whole foods to every snack/meal and working on my New Year’s Resolution.

Goal: Eat At Least One Piece of Fresh Fruit Every Day

This is easy to remember and my go-tos are apples and bananas! I make sure to eat one or the other every day. I like this meal for breakfast: apple and whole grain waffle with peanut butter.

Goal: Eat Berries or Vitamin C-Rich Fruit Every day

In addition to my apples and banans, I try to eat antioxidant-rich berries and something with vitamins C every day, like pineapple or strawberries. I eat these frozen and blend them with some coconut milk and kale.

Goal: Add Greens to Anything I Can

If I want a veggie burger for dinner, I add kale as a topping. If I want pasta, I’ll make an arugula salad, too. If I’m making a smoothie, I stuff kale into the blender. For breakfast, I’ll sometimes have hummus on toast and add some kale or spinach to the plate. By doing this, I can easily consume a few cups of greens throughout my day.

Goal: Eat Raw Veggies  or a Raw Salad While Cooking

I admit that I love my pasta, pizza, burgers , curry dishes, and sandwiches – delicious cooked foods. But instead of depriving myself of these things, I eat a cup of raw veggies before I indulge, while cooking the meal I want. Carrot sticks, cucumbers, celery, and bell pepper strips are awesome to munch on while I’m cooking.

Goal: Drink Green Juice A Few Days Each Week

I’ve become quite the green juice addict these past couple months!
