As a child, I loved making rice crispy treats with marshmallows, but I had to give them up when I went vegetarian. Marshmallows contain an animal-derived ingredient — gelatin. Not cool. But times have changed and a company called Chicago Vegan Foods now makes Dandies vegan and gelatin-free marshmallows. You can use them to make this Dandies Vegan Classic Crispy Treats.
Dandies marshmallows are made with all-natural ingredients and are completely free of gelatin, artificial junk, and high fructose corn syrup. These non-GMO marshmallows are the star of this recipe.
Recipe — Dandies Vegan Classic Crispy Treats
- 1 10oz bag of Dandies Mini Marshmallows or Dandies Marshmallows
- 5 cups Crisp Rice Cereal
- 2 Tbsp. Vegan Margarine
- 2 Tbsp. Coconut Oil
In a medium pot on very LOW heat, combine margarine, coconut oil and marshmallows. Stir until fully broken down. Approximately 7–8 minutes. Mix in cereal and stir until evenly coated with marshmallow cream. Press mixture into a 9×9 pan. Once cool, cut into squares, and enjoy!
