As a child, I ate plenty of boxed mac & cheese, and I loved the Kraft kind in particular. Now, I have completely changed my diet to cut out most of the things I grew up eating – including cheese. But that doesn’t mean my taste for those childhood products has gone away! I still want some easy, creamy mac n’ cheese as much as the next American. Luckily, Earth Balance is here with a new, vegan mac n’cheese product that sits on the shelf.
While I try to eat as many simple, homemade meals as I can, it definitely makes life easier to have convenience foods on hand that are cruelty-free and easy to make. That’s why I am glad that Earth Balance came out with two flavors of vegan, boxed mac & cheese (cheddar and white cheddar) that are similar to the ones I grew up loving.

I have tasted both the cheddar and white cheddar flavors, and I like this mac! This stuff is just as easy to make as the dairy versions, and the taste is very similar, as well. I made my first batch according to package directions, which calls for using two tablespoons of Earth Balance vegan butter spread and four tablespoons of almond milk. But my favorite way to make it is to use one to two tablespoons of tahini paste instead of the vegan butter. Then, I add lots of peas!
Since tahini is a great source of calcium on a vegan diet, using it in this meal helps me get a boost of nutrition. Also, using more dairy-free milk makes the sauce creamier.
I LOVE spicy food and think most meals are better when they have a little bit of a kick to them, so of course, I often add in a few dashes (or several!) of sriracha sauce to this dinner, as well.
The end result is a creamy, spicy mac & cheese. It’s yummy vegan comfort food, and it’s easy to make! Earth Balance Mac n’ Cheese is now one of my pantry staples.
