Lots of great food news this week!
I love mac n’ cheese and try to make a homemade vegan cheese sauce as much as I can out of cashews and nutritional yeast. However, when I don’t want to make it from scratch, I usually opt for a boxed version since there are so many dairy-free choices now on the market!

Oh, you thought vegans only eat fancy green juice, kale salads and quinoa bowls, eh? See, we like our chips and cookies, too! We have designated an entire day in their honor. August 29, 2015 is International Vegan Junk Food Day. So you know what that means…

Wow, what a week! To say this week has been hard would be an understatement; this has been the week from hell. As they say: “When it rains, it pours.” Today marks day 22 that I have been eating this vegan diet.
It has been 13 days since starting this vegan challenge. In addition to cutting out meat and dairy, I have also cut out all refined sugars and soda, and I rarely eat gluten! Here’s a recap of what I’ve eaten and how I did this challenge last week.

I would like to start my first blog post by saying how excited I am to be apart of Lazy Girl Vegan during this challenge and to share it with you!

March 4-8 marked the 2015 Natural Products Expo West in Anaheim, California. I wish I could have gone to this event, but because I wasn’t there in person, of course I’ve been following the expo news on social media. From what I’ve seen, it looks like this is a great year for vegan food.

When I first became vegan, I wanted to find some packaged food items I could rely on when I needed quick, lazy meals. I love mac n’ cheese, and I didn’t want to give it up just because I was giving up dairy. Luckily, I found dairy-free rice macaroni and cheese from Amy’s Kitchen!

In 2013, I decided to stop eating yogurt and try more of a vegan diet. I was a vegetarian at the time. Now, I consider myself a plant-based eater or a 99% vegan. I eat primarily plants, but I occasionally have dairy depending on the situation (like a birthday party where the cake has already been baked).
This blog is for people who want to make better eating choices, who want to eat more plant-based and need resources. I am not interested in making people feel excluded or like they need to be perfect. I often wonder if the more militant vegans understand that their tactics actually turn people away from veganism. I am interested in helping people eat less meat and dairy (or none at all!), not scaring them away from the vegan message of compassion.

In order to change your eating habits, you need to know what the heck you can eat! I assure you that there are SO MANY options; you just have to look and learn!
