Fabulous Things I Love This Week
Green juice, smashed redskin potatoes, organic pot pie, yum. There are so many delicious vegan food dishes out there! And it’s not just here in New York City where restaurants and stores carry plant-based fare. Those who live in and near Ferndale, Michigan will be happy to know there’s a vegan restaurant opening there in December!
Juice Generation in New York City
Juice Generation has several locations throughout New York City, and there is one close to the office space where I work in midtown Manhattan. This place is a great stop for a snack! I usually get a green juice or an acai poptart during that late afternoon slump. Juice Generation also serves an assortment of vegan pastries and refrigerated raw food meals.

GreenSpace Cafe in Ferndale, Michigan
I recently began a new gig as Social Media Manager for GreenSpace Cafe, a new vegan restaurant in Ferndale, Michigan. I have loved working with the owners and marketing team so far over the past couple of months. I can’t wait for them to open! GreenSpace Cafe has been hosting some friends and family preview dinners over the past week, but they don’t officially open for regular public service until Dec. 1. Here is a photo from the restaurant: smashed redskin potatoes with crispy leeks. That’s my kind of food.
H&M Conscious
H&M is one of my favorite clothing stores, and I like what they’re doing with their H&M Conscious program. I recently got a discount through the program in Cincinnati. If you bring in a bag of new or gently used clothes and/or textiles to H&M, the store will give you a card to come back and receive 15% off your purchase.

If you don’t read this website, you should! I check it frequently for the awesome articles about natural health, mental health, yoga, relationships, food and conscious/mindful living. mindbodygreen is a great resource. They have vegan recipes, tips from nutritionists, personal stories and more.
Amy’s Kitchen Non-Dairy Vegetable Pot Pie
Growing up in Northern Kentucky, one of my favorite dinners was a chicken pot pie. Now that I’m 99% vegan, like the Non-Dairy Vegetable Pot Pie from Amy’s Kitchen, which is made with organic whole wheat flour, organic tofu, organic carrots, organic potatoes, organic onions, and organic peas.
