Have you heard of Chloe Coscarelli? She’s a beloved vegan chef who rose to culinary stardom after winning Cupcake Wars a few years ago. Then, she came out with a few cookbook, like Chloe’s Vegan Italian Kitchen. Now, she’s in the restaurant business! About a month ago, she opened her new restaurant on Bleecker Street in NYC called by CHLOE. I’ve been there twice now and, yes, I’ll say I’m a cult follower. It seems I’m not the only one!

If there’s any place where a vegan restaurant can take on a life of its own and gain instafame, it’s New York City. Right now, vegans are going crazy for by CHLOE. A search for “by CHLOE NYC” on Google brings up a lot of positive press. Take a peek at the by CHLOE social media accounts and see fan after fan after fan post photos and “OMG YUM” statements about their lunch.

By CHLOE is 100% vegan, plant-based and kosher certified. The menu is free of meat, dairy and egg products and contains no saturated animal fats, cholesterol, preservatives and/or artificial flavors.

The menu features vegan brunch fare, salads, burgers, sandwiches, fries, mac n’ cheese, soup, pasta, cold-pressed juice, ice cream, baked goods, and a daily market specials menu. I want the Guac Burger; it’s a black bean-quinoa-sweet potato patty with corn salsa, onion, guacamole, tortilla strips and chipotle aioli on a whole wheat bun. Plus, sweet potato fries!!!

This is fast food you can feel good about. On her website, Chloe says, “by CHLOE. is committed to using seasonal & locally sourced ingredients whenever possible, and prepare all of our menu items in-house daily, including our patties, condiments, sauces, cheeses + grab and go offerings.”

Update Sep 26 –> Since I wrote this blog post, news has come out that by CHLOE is expanding to a second location in the Flatiron District in NYC! Awesome.
